Ayurvedic Nutrition versus Western Nutrition?
The Western approach to nutrition is a biochemical approach that focuses on food composition. It assesses the quantities of minerals, vitamins, proteins, carbohydrates, fats ... we daily need.
Ayurveda integrates this but found this vision too limited. It considers that there is also a synergy between the substances of food and the body. It focuses more on quality (flavor, metabolic actions and post-digestive actions) than quantity of food. It's not only what we eat that matters, but what our body can really assimilate (linked to the strength of our digestive enzymes). |
A key axis of Ayurvedic nutrition is thereby to stimulate the enzymatic function that is essential for proper digestion and assimilation of nutrients, and for a good elimination.
It also takes into account how we eat (time, duration, habits ...). Indeed, the work of innovative doctors demonstrates that good nutrition depends on many factors outside the food itself. Nutrition itself comes from the interaction of various factors: our individual nature, our current state of health, the environment and the food we eat. |
